01 Tank Ratio

30 G fresh / 40 G waste

Your tank sizing already satisfies the GA Department of Public Health rule that the waste tank must be at least 15% larger than the fresh tank — passes inspection on day one.

02 Vent Hood

6″ overhang rule

The 6–7 ′ commercial range hood is bracketed to overhang the cookline by at least 6″ on all open sides to capture grease and heat — a hard requirement under GA fire code.

03 Fire Suppression

Ansul system advisory

An automatic suppression system over grease-producing appliances is required by GA fire code. Budget $2,500 – $4,000 separately; must be installed by a licensed fire protection company.

04 Gas Manifold

Three appliances, one feed

Galvanized black-iron lines are sized as a manifold so the flat top doesn’t starve when the fryer kicks on — three regulators, one balanced supply, pressure tested before light-up.

05 Sink Access

Unobstructed hand sink

The hand wash sink is mounted for “easily accessible” use under GA DPH — not tucked behind a swinging door or under a counter. Soap and towel dispenser positions confirmed.

06 Drain Slope

¼″ per foot · gravity-fed

The 40 g waste tank sits below the sink drains to maintain a gravity-fed ¼″ per ft slope, preventing standing water and odors — a common DIY-assist failure point we eliminate at rough-in.
